With Scheurmanns Disease I would say it differs person to person on what one is capable of doing. It's best to stay as mobile and as active as you can do, as well as building muscle around the affected area.
It depends on age, degree of curve and the knock on effect this has to the rest of your body-including how you stand, walk, sit etc. Weather your heart, lungs or respiratory system is affected.
Personally, I can work as a chef or any hands on job part time or full time, quite comfortable as long as I stretch, rest and regularly practise yoga outside of work.
